The menu blends authentic Oaxacan and Northern Mexican culinary traditions with an elevated, modern approach—featuring refined braises, handcrafted tortillas, wood-fired elements, and a curated mezcal, tequila, and Spanish wine program.


They are seeking a bilingual, hands-on General Manager to steward this opening and lead the restaurant through pre-launch, grand opening, and ongoing operations. This leader must be a self-starter—someone who thrives with autonomy and can build structure, systems, and team culture from the ground up.

What You Will Lead


Pre-Opening Responsibilities

  • Build and execute a full opening timeline from construction coordination to soft openings
  • Develop FOH systems, SOPs, and service standards aligned with the concept’s elevated identity
  • Recruit, hire, and onboard the FOH team
  • Create training frameworks for service, cultural values, beverage knowledge, and guest experience
  • Establish vendor relationships, inventory systems, and opening checklists
  • Collaborate closely with culinary leadership to integrate menu identity into service flow
  • Ensure brand integrity through adherence to visual, service, and experiential guidelines


Post-Opening Responsibilities

  • Deliver an exceptional guest experience rooted in warmth, professionalism, and elevated hospitality
  • Manage all operations: labor, COGS, P&L, scheduling, reporting, and team leadership
  • Build and nurture a positive, engaged, high-performing FOH culture
  • Oversee continued training in mezcal, tequila, Spanish wine, and regional Mexican cuisine
  • Lead service with a hands-on approach—running food, greeting guests, coaching the team
  • Maintain a beautifully consistent environment aligned with the company’s standards
  • Drive accountability, team development, and operational excellence

Candidate Profile

Required

  • Bilingual (Spanish + English)
  • Leadership experience in upscale or chef-driven restaurant environments
  • Strong experience with openings or large-scale rollouts preferred
  • Hands-on leadership style with a genuine commitment to hospitality
  • High emotional intelligence, communication skills, and team-building ability
  • Solid operational and financial management skills
  • Ability to thrive in a fast-paced, pre-opening environment with limited initial structure


Preferred

  • Experience with elevated Mexican, Latin, or regional/heritage-driven cuisines
  • Knowledge of mezcal, tequila, sotol, agave spirits, and/or Spanish wines
  • Background in boutique or small-footprint restaurant operations


Compensation & Benefits


  • Base Salary: $90,000–$105,000
  • Incentive Program: Participation in the company’s award-winning bonus and leadership incentive program, known for rewarding high performance and operational excellence
  • Vacation: 2 weeks annually; 3 weeks after 3 years
  • Health Insurance: Company pays 50% of the premium for the employee’s entire family
